Introducing the Bax
team

The Bax Castle is now most definitely in private hands having been bought from one of the big national brewers by a local family in late 2023, with every intention of keeping it for a long time.

Ollie, the middle lad of the family, is the new landlord. Most recently he ran the Rising Sun in Nutbourne, but has been working in and around the local hospitality industry for most of the last 10 years. Don’t indulge his obsession with Star Wars, because you might never get away.

Adam, our chef, has found his way to the Bax having worked for big chains and independents alike in and around Chichester. Adam and Ollie lived together during lockdown where Ollie found (with an increase to his waistline) that Adam had a flare and passion for cooking! His favourite dish is Aglio e Olio and when not working can be found in the comic book store, at the squash courts or in his kitchen at home.

We take our food very seriously – our aim is to buy local, in season and cook from scratch whenever that is possible, producing straight-forward but excellent modern British pub food, with the odd adventurous regularly changing special to keep our chefs’ creative juices flowing. We hope, in time, to be able to measure our food metres, rather than food miles – but it will take time to develop meaningful relationships with local producers. A journey we look forward to.

We have a passion for interesting and adventurous wine and beer. Our main drinks menu is full of recognisable products and brands but keep an eye out for our regularly changing guest ale and wine offers.

Local matters – our main drinks supplier is the only key supplier not based in Sussex (or very close to it). For everything else, from our plumbers, carpenters and electricians, to our wine supplier and food suppliers, we have tried to be as local as we can – with many based in Southwater, Horsham and Christs Hospital.
